1. MAIN DIFFERENCES
In principle, the terms aging, maturation and elevation refer, after fermentation, to the wine still in wood or steel, while the term aging to wine already in the bottle. Over the years the use of aging and refinement has changed. With reference to the first, we tend to use more maturation, because we imagine the wine as it matures, its organoleptic characteristics evolve. Since the refinement in the bottle is decisive for some productions, the wine continues to evolve until you pour it into the glass and in some ways even after.

The best types of wines for aging are important reds, such as Nebbiolo, Barbaresco, Barolo, Montepulciano d’Abruzzo, Aglianico, Brunello di Montalcino, Chianti Classico, Amarone, Sangiovese or Cannonau.
