2. DESCRIPTION
The barriques are small barrels of French origin built with oak wood, of small dimensions, 225 liters the Bordeaux one and 228 liters the Burgundian one.
They are used for important red wines that have a good structure, but also on dry whites or classic method sparkling bases.
The wine inside the barrique is enriched with many compounds released by the wood: ellagic tannins, phenolic aldehydes, lactones and phenolic acids.
In addition to giving the wine aromas that will remind our nose of vanilla, toasted wood, coconut, the function of the barrique is to allow controlled oxygenation: oxygen penetrates through the staves slowly, thus favoring natural micro-oxygenation and the polymerization of tannins.
