VINIFICATION
It is harvested in mid-September and a soft pressing takes place. The must ferments on the marc for about 10 days at a controlled temperature that does not exceed 30 ° C. At least 4 daily pumpings over allows the best extraction of the characteristic ruby color with violet reflections and tannins.
AGING
At the end of fermentation, the wine is transferred to steel tanks for decanting and racking which takes place through frequent decanting, where the malolactic fermentation also takes place. It is bottled in the heat in the summer and can be released after a further month of aging.
COLOR
Intense ruby red with violet reflections.
PERFUME
fresh, fragrant, fruity, with hints of cherry, strawberry, and raspberry.
TASTE
In the mouth, the wine is full, dry, harmonious in the alcoholic, acidic, and tannic components, a pleasantly soft and persistent finish with a pleasant aftertaste.
