But in truth, the pulp of almost all the grape varieties is almost colorless, except for the types called tintoree varieties, which have red pulp.

The color of the wine is given exclusively by the skin of the grapes. If to produce rosé wines the skins of red grapes are left in contact with the must for a very short period (generally 24-48 hours is the time necessary to extract the aromatic compounds but not the pigments), to produce white wines from red berried grapes it is necessary to immediately separate the solid parts from the liquid ones. This process is the so-called white vinification: the skins – full of anthocyanins (the pigments naturally contained in them) – in this way will not be able to release their color.
Among the wines produced with white vinification we remember the Pinot Nero grape variety, for the Franciacorta and Champagne bubbles, the so-called Blanc de Noir, or champagne obtained from black grapes, and Pinot Grigio.
